This Brownie Recipe is Better Than Nigella’s (and it’s guilt free)


+ 2 or 3 cups of grated sweet potato (1 medium sized sweet potato)

+ 2 Whole eggs

+ 1/2 cup of melted coconut oil

+ 2 tsp vanilla extract

+ 1/3 cup of honey (you can use less depending on your sweet tooth!)

+ 1/2 cup coco or cacao powder (sifted)

+ 1/2 teaspoon bicarb

+ 3 tbs coconut flour or self raising flour


1. Preheat oven to 185 decrees C. Make sure the oven is HOT when you put the mixture in!

2. Combine potato, eggs, vanilla, honey and coconut oil in a mixing gown and stir. Smell it from time to time and envision delicious brownies of the future. Smells amazing, right?! Add coco, bicarb and stir. Lastly add in the flour making sure you don’t add too much. The mixture might look a little runny but that will mean the brownies will be moist. And did I mention delicious?

3. Back for 30 minutes. Cool and then remove from the tin. Cut into squares.

4. DEVOUR!!!!!

*** I like to drizzle mine with chocolate and mixed berries! So yummy!
